Traditional Valencian paella ingredients for 4 people

  • 400 g of rice with D.O. Arròs de València (variety Senia, Albufera or Bomba)
  • Half a chicken cut into small pieces (about 900 g)
  • Half a rabbit cut into small pieces (about 500 g)
  • The rabbit's liver
  • 200 g of flat green beans (preferably ferraura and roget varieties in equal parts)
  • 100 g of carob
  • 100 ml of extra virgin olive oil
  • 2 ripe tomatoes to grate
  • 15 g of salt
  • 1 g of saffron
  • 1 teaspoon of sweet paprika
  • A few sprigs of rosemary
  • Water
