What are the best chill, “skill grind” games on console?

I just want to chill and mine some ore, do some fishing, maybe cook a bit here and there. RuneScape is the vibe I’m looking for but I’m unfortunately limited to console. I have ESO, BDO, a trial account for FFXIV, and obviously the various FTP games available, but I haven’t really dived into any of them. Where should I be focusing my time for the experience I’m looking for?
